Our client is a leading chocolate and confectionery manufacturer in Thailand. They are currently looking for an experienced and passionate R&D Officer with a background in chocolate or confectionery to join their team, with the factory based in Wellgrow, Chachoengsao.
This role focuses on developing, testing, and supporting chocolate and confectionery products from concept to commercialization, ensuring they are scalable, safe, and market-ready. The ideal candidate has strong hands-on chocolate knowledge, a solid food science background, and can work closely with Production, Quality, and Commercial teams.






Responsibilities:
  • Develop new chocolate and confectionery products including bars, fillings, coatings, inclusions.
  • Improve and optimize existing recipes for cost, quality, and performance
  • Translate customer briefs, market trends, and internal concepts into workable formulations
  • Conduct product trials to evaluate flavor, texture, appearance, and shelf life
  • Plan and execute pilot and factory-scale trials for new and renovated products
  • Ensure formulations are scalable, repeatable, and compatible with existing production equipment
  • Work closely with Production to fine-tune processing parameters such as tempering, molding, and enrobing
  • Support first production runs and troubleshoot technical issues during scale-up
  • Prepare and maintain product specifications, formulations, processing instructions, and stability records
  • Ensure compliance with food safety, regulatory, and allergen requirements in collaboration with Quality
  • Evaluate raw materials and support ingredient trials or substitutions with suppliers
  • Propose improvements to enhance consistency, shelf life, and sensory quality
Qualifications:
  • Bachelor’s degree in Food Science, Food Technology, Food Engineering, Food Chemistry, or a related field
  • 2–5 years of experience in R&D or product development within chocolate or confectionery
  • Hands-on experience in factory or pilot plant environments
  • Experience supporting OEM/ODM or customer-driven product development is an advantage
  • Strong knowledge of chocolate processing such as tempering, molding, and enrobing
  • Good understanding of cocoa ingredients, fats, sugars, emulsifiers, and shelf-life stability
  • Basic knowledge of food safety systems including HACCP, GMP, and allergen control
  • Familiarity with regulatory and labeling requirements for food products
  • Comfortable conducting trials, maintaining documentation, and recording technical data
